INGREDIENTS:

Thick sliced white bread (the fluffier the better)

Apples ( quartered , peeled and then sliced in thin wedges )

Bananas

Eggs

Vanilla

Pecans

Brown Sugar (demerara)

Cinnamon

Salt and Pepper

DIRECTIONS:

Butter the bottom of a deep baking pan. Lay down a thin-sliced layer of apple to cover the bottom of the baking dish. and then scatter thin slices of one banana over that. Lay down a layer of white bread, trimming edges so they fit tightly and filling empty areas with scraps of bread.Add another layer of thin-sliced apple and then another banana. Sprinkle brown sugar, cinnamon and pecans over the top. In a mixing bowl, mix eggs , milk , salt and pepper and vanilla like you would to make french toast. Pour mixture over the layers of apples bananas and bread , then bake at 350’F for one hour.

It should be just moist , but firm in the middle when you take it out, and it will be puffy, like a souffle. It looks great this way, so have the guests waiting at the table when you bring it out.

Slice into big chunks and serve. ( About one slice of bread per person )

Serve with whipping cream or French Vanilla Yogurt .

Lets face it, I usually serve this with maple syrup roasted three pepper bacon, but perhaps that is just too decadent , and should only be done on the Innchanter.

Enjoy
